This delicious recipe for Bacon Chipotle Grilled Pork Tenderloin with Pineapple Salsa pairs perfectly with Talmage Cellars “T” 2015 Cabernet Sauvignon.
1. Sprinkle tenderloin with 2 tablespoons Seasoning. Mix 2 teaspoons of the lime juice and honey in small bowl; set aside.
2. Grill pork over medium heat 25 to 30 minutes or until desired doneness, turning occasionally and brushing with honey and lime mixture during last few minutes of grilling. Let stand 5 minutes before slicing.
3. Meanwhile, grill pineapple, bell pepper and red onion 5 to 7 minutes or until lightly charred and tender-crisp. Cool slightly. Coarsely chop and place in medium bowl. Stir in remaining 1 teaspoon lime juice, 1/2 teaspoon Seasoning and cilantro.
4. Slice pork tenderloin and serve with the pineapple salsa.
