The majority of the grapes for our Artisan 5 2016 Cabernet Sauvignon came from a single vineyard in the Spring Mountain District of Napa Valley. There, steep terraces above 2,000 feet in elevation produce fruit with a very low yield, down to 3 or 4 tons per acre. An extended maceration during fermentation gives this Cabernet Sauvignon blend of 84% Cabernet Sauvignon, 11% Cabernet Franc and 5% Merlot a deep dark robe. The nose is very complex and displays ripe dark fruit like blackberry, cherry and black currant. The second nose reveals maturity with black licorice, toasted oak, vanilla and black pepper flavors. The mouth offers a generous amount of silky tannins from 16 months of French oak barrel ageing. The toast of the oak barrels provide coffee and dark chocolate characters. The addition of Cabernet Franc and Merlot to this wine gives it tremendous balance and a perfect amount of acidity for long and peaceful ageing.
